- 2 large eggs, separated
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup milk
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon cream of tartar
- Butter, for cooking
- Maple syrup and powdered sugar, for serving
Instructions
- In a large bowl, whisk the egg yolks and sugar together until pale and creamy.
- Add the vanilla extract and milk, and mix until combined.
- Sift in the flour and baking powder, and gently fold until just combined.
- In a separate bowl, beat the egg whites with the cream of tartar until soft peaks form.
- Gradually add the sugar while continuing to beat until stiff peaks form.
- Gently fold the egg whites into the egg yolk mixture in three additions, being careful not to deflate the batter.
- Heat a non-stick skillet over low heat and add a little butter.
- Spoon the batter into the skillet, forming thick pancakes. Cover with a lid and cook for about 4-5 minutes on each side, until golden brown.
- Serve with maple syrup and a dusting of powdered sugar.
Notes
- Make sure to use fresh eggs for the best fluffiness.
- Cooking on low heat is essential to allow the pancakes to rise without burning.
- For extra flavor, you can add a few drops of lemon juice or matcha powder to the batter.
