- 1 lb ground beef
- 2 large onions, thinly sliced
- 1 cup long-grain white rice
- 2 cups beef broth
- 1 cup shredded Swiss cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil and butter over medium heat.
- Add onions and cook until caramelized, about 15 minutes.
- Add ground beef and cook until browned.
- Stir in rice, beef broth, thyme, salt, and pepper.
- Bring to a simmer, then cover and bake for 25 minutes.
- Remove cover, top with Swiss and Parmesan cheese.
- Bake uncovered for 10 minutes until cheese is melted.
- Let rest for 5 minutes before serving.
Notes
- Use a mandoline for even onion slices.
- Substitute mozzarella for Swiss if preferred.
- For extra flavor, deglaze the pan with 1/4 cup white wine before adding broth.
