  • 2 large onions, thinly sliced
  • 1 tsp sugar
  • 1 tsp salt
  • 4 cups beef broth
  • 1 cup water
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 bay leaf
  • 1 package (16 oz) potato gnocchi
  • 1 cup shredded Gruyère cheese
  • 1 tbsp flour
  • 1/4 cup dry white wine (optional)
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onions, sugar, and salt. Cook until caramelized, about 20 minutes.
  3. Sprinkle flour over onions and stir for 1 minute.
  4. Deglaze with wine (if using), then add broth, water, Worcestershire sauce, thyme, and bay leaf.
  5. Simmer for 15 minutes.
  6. Add gnocchi and cook until they float, about 3 minutes.
  7. Remove bay leaf and ladle soup into bowls.
  8. Top with Gruyère cheese and broil until melted.
  9. Garnish with parsley and serve hot.
