- 2 tbsp butter
- 2 large onions, thinly sliced
- 1 tsp sugar
- 1 tsp salt
- 4 cups beef broth
- 1 cup water
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 1 bay leaf
- 1 package (16 oz) potato gnocchi
- 1 cup shredded Gruyère cheese
- 1 tbsp flour
- 1/4 cup dry white wine (optional)
- Fresh parsley for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add onions, sugar, and salt. Cook until caramelized, about 20 minutes.
- Sprinkle flour over onions and stir for 1 minute.
- Deglaze with wine (if using), then add broth, water, Worcestershire sauce, thyme, and bay leaf.
- Simmer for 15 minutes.
- Add gnocchi and cook until they float, about 3 minutes.
- Remove bay leaf and ladle soup into bowls.
- Top with Gruyère cheese and broil until melted.
- Garnish with parsley and serve hot.
Notes
- Use homemade gnocchi for better texture.
- Adjust salt if using store-bought broth.
- For a vegetarian version, replace beef broth with vegetable broth.
