- 2 large onions, thinly sliced

- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- 1 cup beef broth
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, melt the butter and olive oil. Add the sliced onions and cook, stirring frequently, until they are caramelized (about 15-20 minutes).
- Season the onions with thyme, garlic powder, salt, and pepper. Pour in the beef broth and let it simmer for an additional 5 minutes.
- In a large baking dish, place the chicken breasts and season with salt and pepper. Pour the caramelized onion mixture over the chicken.
- Sprinkle the Gruyère and Parmesan cheeses evenly on top of the chicken and onions.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
