Description
A classic French onion soup made with caramelized onions, rich beef broth, and topped with crusty croutons and melted cheese.

- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 4 cups beef broth
- 1 cup dry white wine
- 1 teaspoon fresh thyme leaves
- 1 bay leaf
- 6 slices of crusty bread
- 1 1/2 cups shredded Gruyère cheese
- Freshly ground black pepper to taste
Instructions
- In a large pot, melt butter and olive oil over medium heat. Add the sliced onions and salt, cooking until they are soft and caramelized, about 25-30 minutes.
- Add sugar to help with caramelization, stirring frequently until the onions are golden brown.
- Pour in the white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes.
- Add the beef broth, thyme, and bay leaf. Bring the soup to a simmer and cook for an additional 20 minutes.
- Preheat the broiler. While the soup simmers, prepare the croutons by toasting slices of bread until golden brown.
- Remove the bay leaf from the soup and ladle the soup into oven-safe bowls. Top each bowl with a slice of toasted bread and a generous amount of Gruyère cheese.
- Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown.
- Serve hot, garnished with freshly ground black pepper.
Notes
- For a richer flavor, use homemade beef broth.
- You can add a splash of sherry or brandy for extra depth in flavor.
- Make sure the bowls are oven-safe to avoid breakage under the broiler.
