- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 1 pound fresh apricots, halved and pitted
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together flour, butter, granulated sugar, and salt until crumbly. Gradually add ice water until the dough comes together.
- Roll out the dough on a floured surface to fit a tart pan. Press the dough into the pan and trim any excess.
- In a separate bowl, combine apricots, brown sugar, vanilla extract, cinnamon, lemon juice, and cornstarch. Toss gently to coat.
- Arrange the apricot mixture evenly over the crust.
- Bake for 30-35 minutes or until the apricots are tender and the crust is golden brown.
- Allow to cool slightly before serving.
