- 3 tbsp butter
- 4 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup grated parmesan cheese
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 tbsp chopped fresh parsley
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken tenders and cook for 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
- Add rice, thyme, oregano, salt, and pepper. Stir to coat the rice in the garlic butter.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes until rice is tender.
- Stir in parmesan cheese and fresh parsley.
- Serve chicken tenders over the herbed parmesan rice.
