Ingredients

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 medium zucchini, sliced
  • 1 cup sweet corn kernels
  • 1 tablespoon olive oil

  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season chicken breasts with salt, pepper, and thyme.
  3. Cook chicken for 6-7 minutes per side until golden and cooked through. Remove from pan and set aside.
  4. In the same pan, melt butter and sauté garlic for 30 seconds until fragrant.
  5. Add zucchini and corn, cooking for 4-5 minutes until tender.
  6. Return chicken to the pan, coating it with the garlic butter sauce.
  7. Garnish with fresh parsley before serving.
