Ingredients

- 2 boneless, skinless chicken breasts
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 medium zucchini, sliced
- 1 cup sweet corn kernels
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat olive oil in a large pan over medium heat.
- Season chicken breasts with salt, pepper, and thyme.
- Cook chicken for 6-7 minutes per side until golden and cooked through. Remove from pan and set aside.
- In the same pan, melt butter and sauté garlic for 30 seconds until fragrant.
- Add zucchini and corn, cooking for 4-5 minutes until tender.
- Return chicken to the pan, coating it with the garlic butter sauce.
- Garnish with fresh parsley before serving.

- Adjust seasoning to taste.
- Serve with rice or crusty bread if desired.
