Ingredients

- 1 lb sirloin steak, cubed
- 1 lb baby potatoes, halved
- 3 tbsp butter
- 4 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add potatoes and cook for 10 minutes until golden and tender.
- Push potatoes to the side and add steak bites.
- Sear steak for 3-4 minutes until browned.
- Add butter, garlic, rosemary, and thyme.
- Toss everything together and cook for 1 more minute.
- Season with salt and pepper.
- Serve immediately.
Notes
- Use a well-heated skillet for the best sear.
- Adjust cooking time if using a thicker cut of steak.
- Replace fresh herbs with dried herbs if needed (use half the amount).
