- 2 salmon fillets (6 oz each)
- 1/2 lb shrimp, peeled and deveined
- 2 cups broccoli florets
- 1 cup corn kernels (fresh or frozen)
- 3 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix melted butter, garlic, lemon juice, salt, pepper, and paprika.
- Place salmon and shrimp on a baking sheet and drizzle half the garlic butter mixture over them.
- Toss broccoli and corn with the remaining butter mixture and spread around the salmon and shrimp.
- Bake for 12-15 minutes until salmon is cooked and shrimp turns pink.
- Garnish with fresh parsley before serving.
Notes
- For extra crispiness, broil for 1-2 minutes at the end.
- Replace butter with olive oil for a lighter version.
- Adjust seasoning to taste.
