Ingredients

- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
- 4 medium potatoes, peeled and cubed
- 1/2 cup milk
- 2 tbsp butter
- 4 carrots, sliced
- 1 tbsp honey
- 1 tbsp brown sugar
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt, pepper, minced garlic, rosemary, and thyme. Heat olive oil in a skillet and sear chicken for 3 minutes per side.
- Transfer skillet to the oven and bake for 20 minutes or until chicken reaches 165°F (74°C).
- Boil potatoes in salted water until tender. Drain and mash with milk and butter. Season to taste.
- In a saucepan, cook carrots with honey and brown sugar over medium heat until glazed and tender, about 10 minutes.
- Serve garlic herb chicken with mashed potatoes and glazed carrots.
