Description

A hearty and flavorful meal featuring garlic herb chicken, creamy mashed potatoes, and sweet glazed carrots.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp dried herbs (thyme, rosemary, parsley)
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tbsp butter
  • 6 medium carrots, peeled and sliced
  • 2 tbsp honey
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, minced garlic, and dried herbs.
  3. Heat olive oil in a skillet over medium heat. Sear the chicken for 2-3 minutes on each side until golden brown.
  4. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until fully cooked.
  5. While the chicken bakes, boil the potatoes in salted water until tender. Drain and mash with milk and butter. Season with salt and pepper.
  6. In a separate pan, sauté the carrots in butter over medium heat for 5 minutes. Add honey and cook for another 5 minutes until glazed.
  7. Serve the garlic herb chicken with mashed potatoes and glazed carrots on the side.
