- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tbsp dried herbs (thyme, rosemary, parsley)
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 2 tbsp butter
- 6 medium carrots, peeled and sliced
- 2 tbsp honey
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, minced garlic, and dried herbs.
- Heat olive oil in a skillet over medium heat. Sear the chicken for 2-3 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes, or until fully cooked.
- While the chicken bakes, boil the potatoes in salted water until tender. Drain and mash with milk and butter. Season with salt and pepper.
- In a separate pan, sauté the carrots in butter over medium heat for 5 minutes. Add honey and cook for another 5 minutes until glazed.
- Serve the garlic herb chicken with mashed potatoes and glazed carrots on the side.
Notes
- Use fresh herbs for a more vibrant flavor.
- Adjust honey quantity for desired sweetness in the carrots.
- Double the recipe for leftovers.
