- 1.5 lbs baby potatoes, halved
- 2 cups mixed vegetables (carrots, bell peppers, zucchini)
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes and vegetables with olive oil, garlic, herbs, salt, and pepper.
- Spread evenly on a baking sheet.
- Roast for 35-40 minutes, stirring halfway.
- Serve hot.
