Ingredients

- 4 medium potatoes, cubed
- 3 carrots, sliced
- 1 zucchini, sliced
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Combine potatoes, carrots, and zucchini in a large bowl.
- Add olive oil, garlic, rosemary, thyme, salt, and pepper. Toss to coat evenly.
- Spread vegetables on a baking sheet in a single layer.
- Roast for 30-35 minutes until tender and golden brown.
- Stir halfway through cooking.
- Serve warm.
Notes
- Cut vegetables in similar sizes for even cooking.
- Fresh herbs can be used instead of dried.
- Adjust seasoning to taste.
