- 4 medium potatoes, cut into cubes
- 3 carrots, sliced
- 1 zucchini, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine potatoes, carrots, and zucchini.
- Add minced garlic, olive oil, rosemary, thyme, salt, and pepper. Toss well to coat.
- Spread vegetables evenly on a baking sheet.
- Roast in the oven for 30-35 minutes, stirring once halfway, until tender and golden.
- Serve warm.
