A delicious and tender rack of lamb roasted with garlic and served with a rich butter sauce, perfect for a special occasion.


Ingredients

  • 1 rack of lamb (about 1.5 lbs)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 1/4 cup chicken broth
  • 1 tsp fresh rosemary, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub lamb with olive oil, minced garlic, salt, and black pepper.
  3. Place lamb on a baking tray and roast for 25-30 minutes for medium-rare.
  4. In a small saucepan, melt butter and add chicken broth and rosemary. Simmer for 2-3 minutes.
  5. Remove lamb from oven, let rest for 5 minutes, then slice and serve with the butter sauce.

Notes

  • For medium doneness, roast for 35-40 minutes.
  • Let lamb rest before slicing to keep juices locked in.
