- 1 lb shrimp, peeled and deveined
- 2 cups cherry tomatoes, halved
- 1 bunch green asparagus, trimmed and cut into 2-inch pieces
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lemon juice
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add shrimp and cook for 2-3 minutes per side until pink.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add asparagus and cook for 3-4 minutes until tender-crisp.
- Add cherry tomatoes and cook for another 2 minutes.
- Return shrimp to the skillet and toss everything together.
- Season with salt, black pepper, and lemon juice.
- Garnish with fresh parsley before serving.
