Ingredients

- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and diced
- 1 bell pepper, chopped (red or green)
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable juice or tomato juice
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- In a large bowl, combine the chopped tomatoes, cucumber, bell pepper, red onion, and garlic.
- Add the vegetable juice and red wine vinegar to the bowl. Stir to combine.
- Slowly drizzle in the olive oil while stirring to emulsify the dressing.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 2 hours to allow the flavors to meld.
- Serve chilled, garnished with fresh basil or parsley.
