Ingredients

  • 1 bell pepper, chopped (red or green)
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable juice or tomato juice
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. In a large bowl, combine the chopped tomatoes, cucumber, bell pepper, red onion, and garlic.
  2. Add the vegetable juice and red wine vinegar to the bowl. Stir to combine.
  3. Slowly drizzle in the olive oil while stirring to emulsify the dressing.
  4. Season with salt and pepper to taste.
