Ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/4 cup cocoa powder
  • 1/4 cup chopped almonds
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup dark chocolate chips (for coating)
  • 1 tsp coconut oil (for coating)

Instructions

  1. Mix shredded coconut, almond butter, honey, cocoa powder, chopped almonds, vanilla extract, and salt in a bowl until well combined.
  2. Roll the mixture into small balls (about 1-inch diameter) and place them on a tray lined with parchment paper.
  3. Freeze the balls for 30 minutes to firm up.
  4. Melt dark chocolate chips with coconut oil in a microwave or double boiler.
  5. Dip each frozen ball into the melted chocolate, coating it completely.
  6. Place the coated truffles back on the parchment paper and let them set at room temperature or in the fridge.
