- 1/2 cup almond butter
- 1/4 cup honey
- 1/4 cup cocoa powder
- 1/4 cup chopped almonds
- 1 tsp vanilla extract
- Pinch of salt
- 1/2 cup dark chocolate chips (for coating)
- 1 tsp coconut oil (for coating)
Instructions
- Mix shredded coconut, almond butter, honey, cocoa powder, chopped almonds, vanilla extract, and salt in a bowl until well combined.
- Roll the mixture into small balls (about 1-inch diameter) and place them on a tray lined with parchment paper.
- Freeze the balls for 30 minutes to firm up.
- Melt dark chocolate chips with coconut oil in a microwave or double boiler.
- Dip each frozen ball into the melted chocolate, coating it completely.
- Place the coated truffles back on the parchment paper and let them set at room temperature or in the fridge.
- Serve and enjoy!

- Store truffles in an airtight container in the fridge for up to 1 week.
- For a nut-free version, replace almond butter with sunflower seed butter.
