- 1/4 cup coconut oil, melted

Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, baking soda, and salt.
- In another bowl, combine melted coconut oil, sugar substitute, egg, and vanilla.
- Combine both mixtures until well blended.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes until edges are golden.
- Let cookies cool before serving.
