Description

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup frozen spinach or kale
  • 1 package (16 oz) gnocchi
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrots, and celery. Cook for another 5 minutes until the vegetables begin to soften.
  3. Stir in the dried thyme and oregano, and cook for 1 minute until fragrant.
  4. Pour in the vegetable broth and canned tomatoes. Bring to a boil.
  5. Add the frozen spinach or kale and gnocchi, and reduce the heat to a simmer. Cook for about 5 minutes, or until the gnocchi is tender.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

  • Feel free to add any other vegetables you have on hand, such as zucchini or bell peppers.
