- 1/4 cup cotija cheese
- 1 tbsp lime juice
- 1/4 cup cilantro, chopped
- 8 small corn tortillas
Instructions
- Marinate chicken in buttermilk for 1 hour.
- Mix cornmeal, salt, pepper, and paprika in a bowl.
- Coat chicken in cornmeal mixture.
- Fry chicken in oil until golden brown.
- Grill corn until charred.
- Brush corn with butter and sprinkle cotija cheese.
- Drizzle lime juice and cilantro over corn.
- Assemble tacos with chicken and corn.
