- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 3 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch cake pans.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat sugars, eggs, oil, and vanilla until smooth.
- Gradually mix the dry ingredients into the wet mixture.
- Fold in grated carrots, walnuts, and raisins.
- Divide the batter evenly between the pans. Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frost with cream cheese frosting and serve.
