- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives
- 1/2 cup crumbled feta cheese
- 1/4 cup tzatziki sauce
- Fresh parsley, chopped for garnish
Instructions
- Preheat a grill or skillet over medium-high heat.
- Season chicken with olive oil, garlic powder, oregano, paprika, salt, and black pepper.
- Cook chicken for 5-6 minutes per side until fully cooked. Let rest, then slice.
- Divide rice or quinoa between two bowls.
- Top with sliced chicken, tomatoes, cucumber, red onion, olives, and feta cheese.
- Drizzle with tzatziki sauce and garnish with fresh parsley.
