Instructions
- Combine olive oil, garlic, oregano, paprika, lemon juice, salt, and pepper in a bowl.
- Coat chicken thighs evenly with the marinade and refrigerate for at least 2 hours.
- Preheat grill or skillet over medium-high heat.
- Cook chicken for 5-7 minutes per side until fully cooked.
- Let chicken rest for 5 minutes, then slice into thin strips.
- Warm pita breads slightly.
- Assemble gyros with chicken, lettuce, tomato, onion, and tzatziki sauce.
- Serve immediately.
