Description

A fresh and tangy Greek chopped salad with creamy yogurt dressing.


Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine romaine, cucumber, tomatoes, red onion, olives, and feta.
  2. In a small bowl, whisk yogurt, lemon juice, olive oil, oregano, salt, and pepper.
  3. Pour dressing over salad and toss gently.
  4. Serve immediately.
