- 4 large potatoes, peeled and cut into wedges
- 200g feta cheese, crumbled
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lemon, juiced
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 200°C (400°F).
- Toss potato wedges with olive oil, oregano, garlic powder, salt, and pepper.
- Spread potatoes on a baking tray in a single layer.
- Roast for 35-40 minutes, flipping halfway, until golden and crispy.
- Sprinkle crumbled feta over potatoes and roast for 5 more minutes.
- Drizzle with lemon juice and garnish with fresh parsley before serving.
Notes
- For extra crispiness, soak potatoes in cold water for 30 minutes before roasting.
- Adjust seasoning to taste.
