Ingredients

  • 2 boneless, skinless chicken
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, and oregano, then cook until golden and cooked through (6-7 minutes per side). Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds.
  4. Stir in orzo, chicken broth, lemon juice, and zest. Bring to a boil.
  5. Reduce heat, cover, and simmer for 10-12 minutes until orzo is tender and liquid is absorbed.
  6. Slice chicken and return to the skillet. Stir in feta and parsley before serving.

Notes

  • Use fresh lemon juice for the best flavor.
  • For extra richness, add a splash of cream at the end.
