Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 1 pound baby potatoes, halved
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them well with the marinade. Let it marinate for at least 30 minutes.
  4. In a baking dish, arrange the halved baby potatoes. Drizzle with olive oil, salt, and pepper, and toss to coat.
  5. Place the marinated chicken thighs on top of the potatoes in the baking dish.
  6. Pour any remaining marinade over the chicken and potatoes.
  7. Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the potatoes are tender and golden.
  8. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, marinate the chicken overnight in the refrigerator.
  • Feel free to add other vegetables, such as bell peppers or carrots, to the baking dish.
