A delicious and flavorful dish combining tender chicken with crispy potatoes, infused with lemon and Mediterranean herbs.

- 4 chicken thighs (bone-in, skin-on)
- 1 pound baby potatoes, halved
- 1/4 cup olive oil
- 4 cloves garlic, minced
- Juice of 2 lemons
- Zest of 1 lemon
- 1 tablespoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- Add the chicken thighs to the bowl and coat them well with the marinade. Let it marinate for at least 30 minutes.
- In a baking dish, arrange the halved baby potatoes. Drizzle with olive oil, salt, and pepper, and toss to coat.
- Place the marinated chicken thighs on top of the potatoes in the baking dish.
- Pour any remaining marinade over the chicken and potatoes.
- Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the potatoes are tender and golden.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate the chicken overnight in the refrigerator.
- Feel free to add other vegetables, such as bell peppers or carrots, to the baking dish.
