Ingredients

- 1 pint cherry tomatoes
- 1 cucumber, sliced
- 1 red bell pepper, cut into chunks
- 1 cup feta cheese, cubed
- 1/2 cup olives (Kalamata or green)
- Fresh oregano or parsley for garnish
- Olive oil, for drizzling
- Salt and pepper, to taste
- Skewers (wooden or metal)
Instructions
- Prepare your skewers by soaking wooden skewers in water for 30 minutes if using. This prevents them from burning.
- On each skewer, alternate threading a cherry tomato, a cucumber slice, a piece of red bell pepper, a cube of feta cheese, and an olive. Repeat until the skewer is filled.
- Arrange the skewers on a serving platter.
- Drizzle with olive oil and season with salt and pepper to taste.
- Garnish with fresh oregano or parsley before serving.
