Ingredients

  • 1 pint cherry tomatoes
  • 1 cucumber, sliced
  • 1 red bell pepper, cut into chunks
  • 1 cup feta cheese, cubed
  • 1/2 cup olives (Kalamata or green)
  • Fresh oregano or parsley for garnish
  • Olive oil, for drizzling
  • Salt and pepper, to taste
  • Skewers (wooden or metal)

Instructions

  1. Prepare your skewers by soaking wooden skewers in water for 30 minutes if using. This prevents them from burning.
  2. On each skewer, alternate threading a cherry tomato, a cucumber slice, a piece of red bell pepper, a cube of feta cheese, and an olive. Repeat until the skewer is filled.
  3. Arrange the skewers on a serving platter.
  4. Drizzle with olive oil and season with salt and pepper to taste.
  5. Garnish with fresh oregano or parsley before serving.
