Ingredients

  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 1/4 cup red onion
  • 1/2 cup black olives
  • 1/2 cup feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper
  • 1/4 cup fresh parsley

Instructions

  1. Cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
  4. Pour the dressing over the salad and toss gently to combine all ingredients.
