- 12 oz cheese tortellini
- 1 cup cherry tomatoes
- 1 medium cucumber
- 1/4 cup red onion
- 1/2 cup black olives
- 1/2 cup feta cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- to taste salt
- to taste black pepper
- 1/4 cup fresh parsley
Instructions
- Cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
- Pour the dressing over the salad and toss gently to combine all ingredients.
- Garnish with fresh parsley and serve immediately, or refrigerate for 30 minutes to allow flavors to meld.
