This refreshing Green Bean Salad is a perfect summer side dish. Crisp green beans are tossed with a zesty vinaigrette and topped with cherry tomatoes and feta cheese for a burst of flavor.

- 1 pound fresh green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until bright green and tender-crisp.
- Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain again and pat dry.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
- In a large bowl, combine the green beans, cherry tomatoes, feta cheese, and red onion.
- Drizzle the vinaigrette over the salad and toss gently to combine.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add other vegetables like bell peppers or cucumbers for added crunch.
- This salad can be made a few hours in advance; just add the dressing right before serving to keep the beans crisp.
