Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until bright green and tender-crisp.
  2. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for a few minutes, then drain again and pat dry.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  4. In a large bowl, combine the green beans, cherry tomatoes, feta cheese, and red onion.
  5. Drizzle the vinaigrette over the salad and toss gently to combine.
  6. Garnish with fresh parsley before serving.

Notes

  • Feel free to add other vegetables like bell peppers or cucumbers for added crunch.
  • This salad can be made a few hours in advance; just add the dressing right before serving to keep the beans crisp.
