Ingredients
Scale
- 2 cups spinach
- 1 cup kale
- 1 lb chicken breast
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Season chicken with salt and pepper.
- Brown chicken in the pan for 5 minutes on each side.
- Remove chicken and set aside.
- Add spinach and kale to the pan, cooking until wilted.
- Pour in chicken broth and lemon juice.
- Return chicken to the pan and cover.
- Bake in the oven for 20 minutes.
