Ingredients

- 8 oz pasta (any short pasta like penne or fusilli)
- 1 cup fresh parsley (chopped)
- 1/2 cup fresh basil (chopped)
- 1/2 cup green onions (sliced)
- 1 cucumber (diced)
- 1 avocado (diced)
- 1/4 cup olive oil (extra virgin)
- 2 tbsp lemon juice (freshly squeezed)
- 1 clove garlic (minced)

Instructions
- Cook the pasta according to the package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, parsley, basil, green onions, cucumber, and avocado.
- In a separate small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.
- Pour the dressing over the pasta salad and toss until everything is well coated.
- Serve immediately or refrigerate for up to 2 hours before serving for the flavors to meld.
Notes
- Add cherry tomatoes or bell peppers for extra color and flavor.
- This salad can be made a day ahead of time; just add the avocado right before serving to keep it fresh.
