- 4 large green bell peppers
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can (15 oz) diced tomatoes, undrained
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the green peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a large skillet over medium heat, sauté the chopped onion and minced garlic until softened.
- Add the ground beef or turkey to the skillet and cook until browned. Drain excess fat.
- Stir in the cooked rice, diced tomatoes (with juice), Italian seasoning, salt, and pepper. Mix well.
- Spoon the meat mixture into each green pepper, packing it down gently. Top each filled pepper with shredded cheese.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Remove from the oven and allow to cool slightly before serving.

- Feel free to customize the filling with your favorite ingredients, such as beans, corn, or different spices.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
