Description

Grilled Aloha Chicken and Pineapple is a sweet and savory dish featuring marinated chicken and grilled pineapple. Perfect for a summer BBQ or a quick weeknight meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 fresh pineapple, peeled and cored, cut into rings
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tbsp brown sugar
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper

Instructions

  1. In a bowl, mix soy sauce, pineapple juice, brown sugar, olive oil, garlic, ginger, and black pepper.
  2. Place chicken in a resealable bag and pour half the marinade over it. Seal and refrigerate for 30 minutes.
  3. Reserve the remaining marinade for basting.
  4. Preheat grill to medium-high heat.
  5. Grill chicken for 6-7 minutes per side, basting with reserved marinade.
  6. Add pineapple rings to the grill and cook for 2-3 minutes per side.
  7. Serve chicken with grilled pineapple.
