Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked chicken, diced
  • 1/4 cup black beans, drained
  • 1/4 cup corn kernels
  • 1/4 cup diced tomatoes
  • 2 tbsp butter, softened
  • 1 tsp taco seasoning
  • 2 tbsp sour cream (optional)

Instructions

  1. Heat a skillet over medium heat.
  2. Mix chicken, black beans, corn, tomatoes, and taco seasoning in a bowl.
  3. Spread butter on one side of each tortilla.
  4. Place one tortilla butter-side down in the skillet.
  5. Sprinkle half the cheese evenly over the tortilla.
  6. Spread the chicken mixture on top.
  7. Add the remaining cheese.
  8. Top with the second tortilla, butter-side up.
  9. Cook for 3-4 minutes per side until golden and cheese melts.
  10. Slice and serve with sour cream if desired.
