- 1 cup fresh strawberries, sliced
- 2 cups mixed greens
- 1/4 cup balsamic vinaigrette

- 1/4 cup sliced almonds
- 2 medium potatoes, diced
- 1 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with salt and pepper, then grill for 6-7 minutes per side until fully cooked.
- Toss diced potatoes with olive oil, rosemary, thyme, salt, and pepper. Roast at 400°F for 25-30 minutes until golden.
- In a large bowl, combine mixed greens, strawberries, feta cheese, and almonds.
- Drizzle salad with balsamic vinaigrette and toss gently.
- Slice grilled chicken and serve over the strawberry salad with herb roasted potatoes on the side.
Notes
- For extra flavor, marinate the chicken in the balsamic vinaigrette for 30 minutes before grilling.
