Ingredients

  • 1 block of halloumi cheese, cut into 1-inch cubes
  • 1 zucchini, sliced
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Skewers (metal or soaked wooden)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the halloumi, zucchini, bell peppers, red onion, and cherry tomatoes.
  3. Drizzle with olive oil and sprinkle with oregano, salt, and pepper. Toss to coat evenly.
  4. Thread the halloumi and vegetables onto the skewers, alternating between each ingredient.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and the halloumi is golden brown.

Notes
