These grilled halloumi and vegetable skewers are a delicious and easy-to-make dish perfect for summer barbecues or as a light vegetarian meal.

- 1 block of halloumi cheese, cut into 1-inch cubes
- 1 zucchini, sliced
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Skewers (metal or soaked wooden)
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the halloumi, zucchini, bell peppers, red onion, and cherry tomatoes.
- Drizzle with olive oil and sprinkle with oregano, salt, and pepper. Toss to coat evenly.
- Thread the halloumi and vegetables onto the skewers, alternating between each ingredient.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and the halloumi is golden brown.
- Remove from the grill and serve immediately.
Notes
- Feel free to use any vegetables you like; mushrooms, asparagus, or eggplant work well too.
- If using wooden skewers, soak them in water for at least 30 minutes before using to prevent burning.
- Serve with a side of tzatziki sauce or a fresh green salad.
