  • 8 oz (225g) halloumi cheese, sliced
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the halloumi slices for 2-3 minutes on each side until golden brown and grill marks appear.
  3. In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and chopped mint leaves.
