- 1 large cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the halloumi slices for 2-3 minutes on each side until golden brown and grill marks appear.
- In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and chopped mint leaves.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and toss to combine.
- Once the halloumi is grilled, cut it into bite-sized pieces and add it to the salad.
