  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat grill or grill pan to medium-high heat.
  3. Toss shrimp with 1 tbsp olive oil, salt, and black pepper.
  4. Grill shrimp for 2-3 minutes per side until pink and cooked through. Remove from heat.
  5. In a large pan, heat remaining olive oil over medium heat. Add garlic and sauté for 30 seconds.
  6. Add cooked pasta, lemon juice, zest, red pepper flakes, and parsley. Toss to combine.
  7. Stir in grilled shrimp and mix well.
