Ingredients

  • 4 ripe peaches, halved and pitted
  • 6 cups arugula, washed and dried
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the cut side of the peach halves with olive oil.
  3. Place the peaches cut-side down on the grill. Grill for about 4-5 minutes, or until grill marks appear.
  4. Remove the peaches from the grill and let them cool for a few minutes. Slice them into wedges.
  5. In a large bowl, combine the arugula, grilled peaches, crumbled feta cheese, and toasted walnuts.
  6. Drizzle the balsamic vinaigrette over the salad and toss gently to combine.
  7. Season with salt and pepper to taste.
