A refreshing grilled peach and arugula salad that’s perfect for summer. The sweetness of the peaches pairs beautifully with the peppery arugula, topped with a tangy vinaigrette.

- 4 ripe peaches, halved and pitted
- 6 cups arugula, washed and dried
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, toasted
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat the grill to medium heat.
- Brush the cut side of the peach halves with olive oil.
- Place the peaches cut-side down on the grill. Grill for about 4-5 minutes, or until grill marks appear.
- Remove the peaches from the grill and let them cool for a few minutes. Slice them into wedges.
- In a large bowl, combine the arugula, grilled peaches, crumbled feta cheese, and toasted walnuts.
- Drizzle the balsamic vinaigrette over the salad and toss gently to combine.
- Season with salt and pepper to taste.
- Serve immediately and enjoy!

- For added flavor, consider marinating the peaches in a little honey and lemon juice before grilling.
- You can substitute feta with goat cheese if preferred.
