Description
A refreshing summer salad combining grilled peaches and blueberries with fresh greens.
Ingredients

- 2 peaches, halved and pitted
- 1 cup blueberries
- 4 cups mixed greens
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Preheat grill to medium heat.
- Brush peach halves with olive oil and grill for 2-3 minutes per side.
- Slice grilled peaches into wedges.
- In a large bowl, combine mixed greens, peach wedges, blueberries, feta cheese, and walnuts.
- Whisk together remaining olive oil, balsamic vinegar, honey, salt, and pepper.
- Drizzle dressing over salad and toss gently to coat.
Notes
- Use ripe but firm peaches for best grilling results.
- Substitute goat cheese for feta if preferred.
- Add grilled chicken for a protein boost.
