Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces burrata cheese
  • 4 cups arugula or mixed greens
  • 1/4 cup walnuts, toasted
  • 1/4 cup fresh basil leaves
  • 2 tablespoons honey
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the cut sides of the peaches with olive oil and season with salt and pepper.
  3. Place the peaches cut-side down on the grill and cook for about 4-5 minutes or until grill marks appear and the peaches are slightly softened.
  4. Remove the peaches from the grill and let them cool slightly.
  5. On a serving platter, arrange the arugula or mixed greens as the base.
  6. Tear the burrata cheese into pieces and scatter it over the greens.
  7. Add the grilled peach halves on top of the salad.
  8. Sprinkle the toasted walnuts and fresh basil leaves over the salad.
  9. Drizzle honey over the entire salad, and if desired, add a balsamic glaze for extra flavor.
  10. Serve immediately and enjoy!

Notes

  • For added flavor, marinate the peaches in a mixture of olive oil, honey, and lemon juice before grilling.
