- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces burrata cheese
- 4 cups arugula or mixed greens
- 1/4 cup walnuts, toasted
- 1/4 cup fresh basil leaves
- 2 tablespoons honey
- Balsamic glaze for drizzling (optional)
Instructions
- Preheat the grill to medium heat.
- Brush the cut sides of the peaches with olive oil and season with salt and pepper.
- Place the peaches cut-side down on the grill and cook for about 4-5 minutes or until grill marks appear and the peaches are slightly softened.
- Remove the peaches from the grill and let them cool slightly.
- On a serving platter, arrange the arugula or mixed greens as the base.
- Tear the burrata cheese into pieces and scatter it over the greens.
- Add the grilled peach halves on top of the salad.
- Sprinkle the toasted walnuts and fresh basil leaves over the salad.
- Drizzle honey over the entire salad, and if desired, add a balsamic glaze for extra flavor.
- Serve immediately and enjoy!
Notes
- For added flavor, marinate the peaches in a mixture of olive oil, honey, and lemon juice before grilling.
- Feel free to substitute the nuts with your favorite variety, such as pecans or almonds.
