Grilled Thai Coconut Chicken Skewers are a flavorful and easy-to-make dish, perfect for summer cookouts or weeknight dinners. The chicken is marinated in a rich coconut milk and Thai spice blend, then grilled to perfection.

- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup coconut milk
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tbsp lime juice
- 1 tsp red curry paste
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1/4 cup chopped cilantro
- Bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together coconut milk, fish sauce, brown sugar, lime juice, red curry paste, garlic, ginger, and cilantro.
- Add chicken pieces to the marinade, coating evenly. Cover and refrigerate for at least 1 hour, preferably overnight.
- Thread marinated chicken onto soaked bamboo skewers.
- Preheat grill to medium-high heat. Grill skewers for 4-5 minutes per side, or until chicken reaches 165°F internally.
- Serve hot with extra lime wedges and cilantro for garnish.
Notes
- For extra flavor, baste the skewers with leftover marinade while grilling.
- If using wooden skewers, soak them in water first to prevent burning.
- You can substitute chicken breasts for thighs if preferred.
