- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup kalamata olives
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat grill to medium-high heat.
- In a bowl, mix olive oil, lemon zest, lemon juice, oregano, garlic powder, salt, and black pepper.
- Coat chicken breasts with the marinade and let sit for 10 minutes.
- Grill chicken for 6-7 minutes per side or until fully cooked.
- Let chicken rest for 5 minutes, then slice.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Top salad with grilled chicken slices and garnish with fresh parsley.
- Serve immediately.
Notes
- Marinate chicken longer for more flavor.
- Replace feta with goat cheese if preferred.
- Add a drizzle of balsamic glaze for extra taste.
