Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon zest, lemon juice, oregano, garlic powder, salt, and black pepper.
  3. Coat chicken breasts with the marinade and let sit for 10 minutes.
  4. Grill chicken for 6-7 minutes per side or until fully cooked.
  5. Let chicken rest for 5 minutes, then slice.
  6. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  7. Top salad with grilled chicken slices and garnish with fresh parsley.
  8. Serve immediately.
