A hearty and flavorful pasta salad loaded with fresh vegetables, cheese, and a tangy dressing.
Ingredients

- 2 cups cooked pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup bell peppers, diced
- 1/2 cup black olives, sliced
- 1/2 cup salami or pepperoni, diced
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup grated Parmesan cheese
- 1/4 cup Italian dressing
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, then drain and cool.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, bell peppers, black olives, salami, and mozzarella.
- Add Italian dressing, olive oil, dried oregano, salt, and pepper. Toss well.
- Sprinkle Parmesan cheese on top and mix lightly.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use gluten-free pasta if needed.
- Add grilled chicken for extra protein.
- Adjust dressing quantity based on preference.
- Best served cold.
