A hearty and flavorful pasta salad loaded with fresh vegetables, cheese, and a tangy dressing.


Ingredients

  • 2 cups cooked pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup salami or pepperoni, diced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Italian dressing
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions, then drain and cool.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, bell peppers, black olives, salami, and mozzarella.
  3. Add Italian dressing, olive oil, dried oregano, salt, and pepper. Toss well.
  4. Sprinkle Parmesan cheese on top and mix lightly.
  5. Chill in the refrigerator for at least 30 minutes before serving.
