Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup corn, frozen or canned
  • 1 can black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups cooked rice
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and diced bell pepper to the skillet. Cook for another 2-3 minutes until the peppers are tender.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in the corn, black beans, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes until everything is heated through.
  5. To serve, place cooked rice in a bowl, top with the ground beef mixture, and garnish with fresh cilantro. Serve with lime wedges on the side.
