- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup corn, frozen or canned
- 1 can black beans, drained and rinsed
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 cups cooked rice
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and diced bell pepper to the skillet. Cook for another 2-3 minutes until the peppers are tender.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the corn, black beans, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes until everything is heated through.
- To serve, place cooked rice in a bowl, top with the ground beef mixture, and garnish with fresh cilantro. Serve with lime wedges on the side.
