Ingredients

- 1 lb ground beef
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14.5 oz)
- 1 cup brown rice
- 2 cups beef broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add onions, garlic, and bell pepper. Cook until softened.
- Stir in diced tomatoes, rice, beef broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20-25 minutes or until rice is cooked.
- Fluff with a fork and serve hot.
