Ingredients

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 3 carrots, chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 can diced tomatoes (14.5 oz)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 cups cooked pasta (optional)
Instructions
- Brown the ground beef in a large pot over medium heat. Drain excess fat.
- Add the onion and garlic, sauté until softened.
- Stir in the carrots and celery, cook for 5 minutes.
- Pour in the beef broth and diced tomatoes. Add oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- If using pasta, stir it in just before serving.
Notes
- You can substitute ground turkey for a lighter option.
- Add frozen vegetables for extra nutrition.
- Store leftovers in an airtight container for up to 3 days.
